Brewing Methods

Coffee Pour Over Brewing Supplies

The "Pour Over" method of brewing is used to describe multiple systems of brewing. The basics of this method are relatively the same, ground coffee is added to a filter within a funnel, hot water is poured over the grounds, and the resulting coffee drips into a container located underneath the filter.  Some popular choices for this type of brewing include the Chemex system, Hario V60, and the Kalita Wave.  Our directions will be using the Hario V60 system for a single cup of coffee.

Required components for the Pour Over include:

  • Goose neck tea kettle
  • Scale capable of weighing to tenths of a gram
  • Grinder (Burr grinder is recommended) if using whole beans
  • Timer
  • Hario V60 Dripper (Size 02 recommended)
  • Hario V60 paper filters (Use filter size matching dripper)
  • Mug or decanter

Ratio:  We recommend starting with a 15:1 ratio.

Grind: Medium/Fine comparable to sugar consistency

Brew:

  1. If using whole beans (recommended), grind 20g of beans just before brewing
  2. Boil filtered water in the goose neck tea kettle.  Start with more water than what will be used to brew.
  3. Place the filter into the dripper and place the dripper over the mug or decanter
  4. Once kettle reaches boil, use the boiled water to soak the filter and allow the water to warm the mug for 30 seconds.
  5. Dump water out of the mug  and place onto the scale.
  6. Place dripper onto mug and add ground coffee into the wet filter.
  7. Zero/Tare the scale in preparation for the water.
  8. Pour boiling water over grounds in a circular motion being sure to wet all grounds - *Goal here is to add water approximately 2-3 times the weight of the coffee grounds (40g-60g of water)
  9. Start timer and let the grounds absorb the water for 30-40 seconds.
  10. Add water in a circular motion until reaching 200g of water.
  11. Once water level gets halfway down the grounds, add additional 100g of water in circular motion.  (Water weight should now be 300g)
  12. Wait approximately 10-15 seconds, then carefully swirl the dripper in a circular motion, so that all grounds are immersed.
  13. After all water has drained through the dripper, discard filter and grounds.
  14. Total time of brew will be approximately 3:00 - 3:30.
  15. Enjoy your freshly prepared cup of coffee!

French Press

French Press Coffee Maker

The french press, or coffee plunger brewer, is one of  the more popular immersion style brewers.  Immersion brewers result in a rich coffee partially due to the oils not being filtered out.  For those coffee lovers who really enjoy  an unfiltered coffee experience, this is a popular choice.  A disadvantage to this method is the sediment left at the bottom of the cup after pouring.  Our recommended brewing process will help reduce some of that residual sediment.

Required components for the French Press include:

  • Kettle for boiling water
  • Scale capable of weighing to tenths of a gram
  • Grinder (Burr grinder is recommended) if using whole beans
  • Timer
  • French Press brewer
  • Mug or decanter

Ratio:  We recommend starting with a 15:1 ratio.

Grind: Medium/Coarse comparable to beach sand consistency

 Brew:

  1. If using whole beans (recommended), grind 20g of beans just before brewing
  2. Boil filtered water in the kettle.  Start with more water than what will be used to brew.
  3. Once kettle reaches boil, pour the water into the empty french press and mug/decanter to warm them up.
  4. Dump water out of the french press and place onto the scale.
  5. Add the ground coffee to the french press.
  6. Zero/Tare the scale in preparation for the water.
  7. Pour the correct amount of boiling water over the grounds being sure to fully immerse.
  8. Start the timer after finishing the pour.
  9. Let the coffee steep for four minutes, which will cause a crust-like layer of grounds to form at the top.
  10. After four minutes, stir the "crust" of grounds (for a special treat be sure to smell the coffee as you stir) and most will sink to the bottom.
  11. Let the coffee sit for another 3 minutes to allow more of the grounds to sink.
  12. Place the top onto the french press, but do not plunge, instead leave the mesh filter at the top of the container.
  13. Pour through the filtered top and enjoy your freshly prepared cup of coffee!
